  • 3 cups (750ml) white grape juice or apple juice
  • 2 tablespoons honey
  • 1 tablespoon powdered gelatin
  • 250g raspberries
  • 125g blueberries
  1. Pour ⅓ cup of juice into a small bowl and sprinkle over the gelatin. Leave to bloom.
  2. While the gelatin is blooming, heat ⅔ cup of the grape juice and the honey into a medium pot over a medium heat. Stir until the honey has dissolved and gently bring to boil. Remove from heat. Transfer the gelatin mixture into the hot liquid and whisk until dissolved. Add the remaining juice. Strain through a sieve and set aside to cool.
  3. Wash and drain your berries.
  4. Divide the berries between 4 - 6 pretty glasses. Pour over the juice mixture, and refrigerate until set.
  5. Serve chilled.
