RIPPER Raspberry and Mango Gummies

Ingredients
For the raspberry gummies layer
  • 250g (approx. 9 ounces) fresh or frozen raspberries
  • ½ cup water
  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons honey
  • ¼ cup powdered gelatin
For the mango gummy layer
  • 1 fresh mango (or 3-4 frozen mango cheeks)
  • ½ cup water
  • ¼ cup freshly squeezed lime juice
  • 1 tablespoon honey
  • ¼ cup powdered gelatin
Method
  1. Pop fresh or defrosted raspberries, water and lime juice into your blender. Blend on high until pureed.
  2. Pour puree mixture into a medium-sized saucepan. Add the honey and gelatin and whisk until lump-free. Heat gently over low heat, whisking constantly until the gelatine is smooth. Remove from heat and pour into silicone moulds, taking care to only pour to the halfway point or a baking dish.
  3. Pop into the fridge to almost set for an hour.
  4. Peel your ripe mango and slice off all the fruit from the pit. No need to be neat about it! Pop fresh or defrosted mango flesh, water and lime juice into your blender. Blend on high until pureed.
  5. Pour puree mix into a medium-sized saucepan. Add the honey and gelatin and whisk until lump-free. Heat gently over low heat, whisking constantly until the gelatin is smooth. Remove from heat and pour to the top of your silicon moulds over the almost-set raspberry gummies, or into your half-filled baking dish.
  6. Pop into the fridge to almost set for 90 - 120 minutes.
  7. Remove from silicone moulds or cut into bite-sized pieces.
