I’m a little bit excited today. I’ve got an AWESOME giveaway for you.

First up – a little back story…

For our last Sydney AIP Picnic, I whipped up some honey marshmallows. They were a BIG hit. HUGE.

They may even have been voted best AIP-friendly offering of the day (at least by the little people in our party). Just saying.

I followed a recipe from the gorgeous Martine over at Eat Heal Thrive. It’s a winner.

Our lovely AIP Picnics have grown into a bit of a ‘thing’, down here. And, like many AIPers, we’re a little bit serious about our recipes (and what goes in them!). So, given our next gathering is due soon, I decided I’d like to experiment with my marshmallow flavouring.

And, I kind of like to put a bit of an Antipodean spin on things when I can…

New Zealand already has their chocolate fish. And their Buzz Bars.  And, while not strictly marshmallow, don’t even get me started on Pineapple LumpsBut, when I asked LM what marshmallow goodies were specific to Australia, he came up blank.

Enter my mango & mint marshmallows!

What could be more Australian than mangoes?*

I have to say, AIP-friendly marshmallows are a pretty big hit with big people as well as little people.

LM is definitely a fan, so it is fair to say I’ve made them more than once! And, I’ve kind of been experimenting with flavours, too… But, I reckon my mango and mint puppies are the best so far. I use freeze-dried mango powder from Fresh As along with some fresh mint.

To make my Mango and Mint Marshmallows, I’ve adapted the Rustic Homemade Marshmallows recipe from the the Urban Poser.

If you’d like to make my version, just click on this link for the base recipe. You’ll need to add 3 tablespoons of mango powder and 1 tablespoon of finely chopped fresh mint to the ingredients.

At step 2, in your mixer bowl, sprinkle the gelatin evenly over 1/4 cup of water. Mix the remaining 1/4 cup of water and the mango powder into a paste. Stir into the gelatin. Allow to bloom.

At the end of step 5, add the chopped mint to the marshmallow mixture and whiz for a further 30 seconds.

That’s it! All other instructions remain the same.

I’ve long been a fan of the fantastic freeze-dried fruit offerings from the peeps at Fresh As.

They’re a Kiwi company and they offer an extensive range of freeze-dried fruits, vegetables, herbs and spices (there’s even feijoa!). I love their product. It tastes intense and amazing, and it has no nasties or additives – just the fruit (or vegetable, or herb, or spice…)

fresh as freeze dried fruit is the best, I normally make raspberry marshmallows with a raspberry jelly in the centre for my Dad on Father’s Day and Christmas but I would love to make him Mango and mint to see if it becomes the new favourite, I will definitely give this a try, thanks for the recipe… P.s Would love to win these fabulous products.. ?

I just started a couple of weeks ago, the paleo lifestyle. I’ve lost 9 lbs between pep and shakeology. I love love love dried fruit and would appreciate this give away tremendously. My 14 year old daughter also loves it and she is also trying to eat healthier. Snacks are a big thing for her so these would help her switch from junk food to paleo friendly!

I think I should win as these would be fantastic for my 2 & a half year old daughter, we make her home made smoothies/iceblocks etc with natural yoghurt & honey as she doesn’t eat any refined sugar. Freeze dried would be perfect as it lasts longer, stays fresher and is so easy to use – yes please!!! 🙂

Why should I win? Well I am no more deserving than anyone else, but I really really love your marshmallows Joanna, and have even made some myself (as you saw when I dropped my glasses in the mixture). I am looking forward to tasting the mango and mint ones this sunday at the picnic!!!
