MARVIE’ Mango & Mint Marshmallows + Giveaway! (AIP)

JFC Fresh As Giveaway

I’m a little bit excited today. I’ve got an AWESOME giveaway for you.

First up – a little back story…

For our last Sydney AIP Picnic, I whipped up some honey marshmallows. They were a BIG hit. HUGE.

They may even have been voted best AIP-friendly offering of the day (at least by the little people in our party). Just saying.

I followed a recipe from the gorgeous Martine over at Eat Heal Thrive. It’s a winner.

Our lovely AIP Picnics have grown into a bit of a ‘thing’, down here. And, like many AIPers, we’re a little bit serious about our recipes (and what goes in them!). So, given our next gathering is due soon, I decided I’d like to experiment with my marshmallow flavouring.

And, I kind of like to put a bit of an Antipodean spin on things when I can…

New Zealand already has their chocolate fish. And their Buzz Bars.  And, while not strictly marshmallow, don’t even get me started on Pineapple LumpsBut, when I asked LM what marshmallow goodies were specific to Australia, he came up blank.

Enter my mango & mint marshmallows!

What could be more Australian than mangoes?*

I have to say, AIP-friendly marshmallows are a pretty big hit with big people as well as little people.

LM is definitely a fan, so it is fair to say I’ve made them more than once! And, I’ve kind of been experimenting with flavours, too… But, I reckon my mango and mint puppies are the best so far. I use freeze-dried mango powder from Fresh As along with some fresh mint.

To make my Mango and Mint Marshmallows, I’ve adapted the Rustic Homemade Marshmallows recipe from the the Urban Poser.

If you’d like to make my version, just click on this link for the base recipe. You’ll need to add 3 tablespoons of mango powder and 1 tablespoon of finely chopped fresh mint to the ingredients.

At step 2, in your mixer bowl, sprinkle the gelatin evenly over 1/4 cup of water. Mix the remaining 1/4 cup of water and the mango powder into a paste. Stir into the gelatin. Allow to bloom.

At the end of step 5, add the chopped mint to the marshmallow mixture and whiz for a further 30 seconds.

That’s it! All other instructions remain the same.

Please note, Jenni’s recipe measurements are based on US sizes.

JFC Mango and Mint Marshmallows

I’ve long been a fan of the fantastic freeze-dried fruit offerings from the peeps at Fresh As.

They’re a Kiwi company and they offer an extensive range of freeze-dried fruits, vegetables, herbs and spices (there’s even feijoa!). I love their product. It tastes intense and amazing, and it has no nasties or additives – just the fruit (or vegetable, or herb, or spice…)

But don’t take my word for how fab’ they are. Take it from someone in the know:

“The flavours are concentrated and bright; the products add great texture to a dish. At Le Benardin, we crumble Fresh As dried mandarin segments over scallops to enhance the citrus flavour in the sauce, a burnt lemon vinaigrette. They bring a light crispness that rehydrates and melts deliciously in your mouth.” – Eric Ripert, Le Benardin, New York City

You can check out the full range on offer at Fresh As right here. You can buy direct or find a local stockist. Trust me when I say it’s so worth a taste test.

So, since I love the Fresh As product so much, I thought I’d see if they’d like to come to the party and help me spread the word… Maybe Marvie’ Mango and Mint Marshmallows will be the next big thing to come out of Australia (with a little help from the Kiwis!)

JFC Fresh As Mango Powder

And, guess what?

The Fresh As peeps came to the party. Boy, did they ever…!

I have over $100 worth of freeze-dried fruit and fruit powders to send to one lucky winner!

Think of all the possibilities…

– stir the fruit pieces through home made ice cream

– add the powder to meringue (or macaroon)

– get creative with ‘crumb’ topping

– add it to a smoothie

– and, of course, create your own marshmallow flavour

Thanks, Fresh As peeps!

I can’t wait to try your mango/mint marshmallows, if I win. I’m also already dreaming up new recipes in my head using the ‘Fresh As’ dried fruit & spices. So, thank you for introducing me to a new product & resource.

Hi Loren – Congrats on being so healthy! I totally understand the ‘healthy treat’ thing.

Good luck!

I think I should win as these would be fantastic for my 2 & a half year old daughter, we make her home made smoothies/iceblocks etc with natural yoghurt & honey as she doesn’t eat any refined sugar. Freeze dried would be perfect as it lasts longer, stays fresher and is so easy to use – yes please!!! 🙂

Hi Vikki – I’ll see what I can do! Good luck 🙂

Why should I win? Well I am no more deserving than anyone else, but I really really love your marshmallows Joanna, and have even made some myself (as you saw when I dropped my glasses in the mixture). I am looking forward to tasting the mango and mint ones this sunday at the picnic!!!

But why should I win? Because I want to make some too, and at the moment, I can’t afford to buy any of these goodies for myself. I hope that will change in the future, when I am well enough from following the Elimination Phase of AIP to have the energy to return to work. Roll on wellness!

Hi Melanie

Did your glasses recover?

Fingers crossed… You’re in the draw.

I’m drooling at the pictures and recipe for marshmallows. I’m a Qld girl from Cairns and miss my mangoes.

Hi Sharon – NOTHING says Australia more to me than mangoes. And, Sydney is Frangipanis…

Good luck!

Hi Joanna, I would love to win some Fresh As mango powder to use in desserts and smoothies because it would confuse the heck out of our fruit fly invasion. We have put buying fresh fruit on hold until they leave for a better home, just so long as it’s not ours!

Brenda! Welcome down under!

You make laugh! – I’m all for confusing your fruit flies!

Good luck 🙂

New subscriber here, and new to Fresh As products. If I win, I envision flavorful smoothies for myself as well as fruity creations for my grandchildren. Thank you for a chance to win!

Hi Corrine – welcome!

The possibilities really are endless with the Fresh As products (and they taste AMAZING!)

Good luck!

Hi Sarah

You’re in the draw, Possum. Good luck!

Hey Joanna, what a fun giveaway! After the SAD to AIP in SIX, I’ve been following the AIP lifestyle. Reintroductions are not going so well, so this would be a nice “treat” that is compliant! Thanks 🙂

Hi lovely Deb!

Reintroductions ARE tough. Are you tracking it all in your food diary?

Good luck in the giveaway. 🙂

Hi Joanna,
I am taking the kids up to see my Mum over the school holidays and this is something that she would love to make for the kids – and something she can also enjoy! She will be just back from holidays and I imagine will be back on the strict AIP to try to recover.
Sacha

Hi Sacha – thanks for stopping by!

You’re in the draw – good luck (for you and your Mum!)

Hi Jo,

Great website and recipes . Congratulations on your new career. These products are great. I throw the mandarin segments into salads for a bit of a zing.

Cheers

Margrit

Hi Margrit! I see the family grape-vine has been at work… You all good?

It seems the mandarin segments are a popular choice – someone else I know dips them in dark chocolate!

Would love to win the fruit powders so I can experiment with new marshmallow flavors. Saved the local (US, TX) stockist link. Looks like they’re out of mango for now…

Ann – I made passionfruit marshmallows over the weekend. I think they even trumped the mango ones!

Good luck in the draw!

It would be so much fun to make our own delicious marshmellows with my daughter.

Let’s see what we can do, HelenJ! Good luck! 🙂
