It’s getting warmer down here in Sydney-town. Summer is coming.

And, that means some days I’m not so keen on my tried ‘n true AIP-friendly brekkie hash first thing in the morning.

In fact, some mornings, I don’t want to eat much at all

This is where my Über Nutrient Dense Green Smoothie comes in. Kermit would be proud!

If I was still knee-deep in my elimination phase of the Autoimmune Protocol, then I’d have this baby with an extra helping of protein – something like my SUPER SIMPLE Breakfast Burger Patties. But, since I’m well and truly in my personal ‘maintenance phase’ – some days this is all I need.

It’s a meal in a glass!

But! – and, this is important – if you’re choosing to have a smoothie, always sit down to ‘eat’ it. Chewing your smoothie is important for digestion. No drinking on the run!

What’s the deal with collagen?

Ingredients
  • 1 cup organic baby spinach, loosely packed
  • ½ cup roughly chopped cucumber
  • ½ cup roughly chopped fresh pineapple
  • ¼ unwaxed lemon
  • ½ avocado
  • ½ cup water
  • ½ cup organic mint
  • 1 tablespoon collagen (optional)
Method
  1. Whizz all ingredients in your high speed blender
  2. Drink!
