I quite like my veggies. Nutrient density is pretty important to me (just in case you didn’t already know that!) and I look for ways to include more good stuff into my diet.

But. After recently having my 7-year old niece to visit, I recognise that this is not the case for everyone.

Especially little people.

So, isn’t it a wonderful thing that Dr. Sarah Ballantyne, The Paleo Mom herself, has teamed up with the good peeps at Vital Proteins to create an AIP-friendly, gut-healing, collagen blend that includes 20 grams of protein from grass-fed collagen peptides per serve, along with 3 serves of organic veggies and 1 serve of organic high-antioxidant fruit.

Not quite sure what collagen is? – Collagen is the most abundant protein in the body. It’s a primary building block of skin, hair, nails, bones, tendons, joints, and cartilage. It is considered the “glue that holds the body together”. Pretty important stuff.

What makes this such a great product is that you can throw it in to soups and smoothies and get a significant boost of nutrients without having to do much (other than remembering to add it!)

I’ve been playing around with ways I can use this not-so-little cannister of nutritional power powder in my diet. The most obvious is to add it to smoothies. Green ones. Because we all know that more veggies are good for us!

So, here’s my current favourite green smoothie number. The sneaky addition of a wedge of organic lemon gives it an amazing lemon mousse-like taste. It received two thumbs up from my green smoothie-loving bloke. I’d love to know what you think…?

Serves: 2 serve
Ingredients
  • 1 scoop Vital Proteins Collagen Veggie Blend
  • ½ cup coconut water (or plain, filtered water)
  • ½ cup coconut milk
  • 1 cup organic spinach
  • 1 pear, cored
  • ¼ wedge of organic lemon (peel and rind included)
  • 6 ice cubes
Method
  1. Combine all ingredients in a blender and mix until smooth
  2. Serve immediately and enjoy!
